🥞 Keto Pikelets (using SNAXX Keto Custard Mix)

Ingredients:

  • 40g SNAXX Keto Custard Mix

  • 20g Butter (plus extra for frying)

  • 20g Cream Cheese (room temperature)

  • 30ml Water (approximate, adjust as needed)


Instructions:

  1. Melt 20g of butter in the microwave.

  2. Add 20g of room temperature cream cheese to the melted butter and mix together until smooth.

  3. Add 40g of SNAXX Keto Custard Mix to the butter and cream cheese mixture.

  4. Stir until combined, then slowly add approximately 30ml of water to loosen the mixture.
    (The batter should be slightly runny, like a thick pancake batter.)

  5. Heat a small amount of butter in a frying pan over medium heat.

  6. Spoon small amounts of the batter into the pan to form mini pikelets.

  7. Cook until bubbles form on the surface, then carefully flip.
    (Be careful not to burn — keep heat moderate!)

  8. Cook the other side until golden and cooked through.

  9. Serve warm — optionally with a little extra butter or sugar-free syrup!
